So I haven't used ApricityOS yet but from what I read about it, it is based off of arch, which I personally don't like because of rolling release function, but it doesn't mean it is not for everyone.  Having used ElementaryOS Freya for 3 months I can say that I wouldn't recommend it.  If you like the look of that you can do what I did and install the Ubuntu version you want and customize it and make it look how you want.  Also many people suggest Linux Mint for beginners, I personally tried mint and hated it.  I would suggest trying out a few more distros, I went through 5 different ones before I chose Ubuntu, but check out this thread that was made a while back, it should be helpful for someone new to linux

I haven't used Apricity OS, but as a beginner you're definitely better off with Elementary, so, good choice! Apricity is based on Arch, which can be unstable and more difficult to use, while Elementary is based off Ubuntu, which is leagues more user-friendly. Good luck!
