Since the front of the Bitfenix Prodigy is really restricted, I am thinking of mounting a 140mm fan on the back as an intake, and another 140mm fan on the front as an exhaust. Or should I just mount 2 140mm fans on the front?

You can't mount 2 140 on the front, but you can mount 2 120, doing so will not give you much benefit owing to the fact that the lower part of the case is where the power supply cage is located and giving a direct airflow towards it wouldn't make a lot of sense. Instead, 140 on the front as intake and either 1 140 on the back or just keep the stock one as exhaust.
