Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

I would like 512gb of ram or more. 

Used computer parts from Ebay are completely fine (any guidance in purchasing is greatly appreciated)

32-64 cores preferred. 

Epyc or threadripper please (used is fine)

How urgently do you need it? AMD just launched the new Threadripper 9000 series, which is drop-in replaceable (after a BIOS update) with the 7000 series mainboards, so expect a sh!tload of older TR CPU's on the used market in the next 6 months or so.

It is not urgent. That sounds great. Can you help guide me in buying the used parts once they enter the market please?

I can't, TR builds are beyond my means. However, keep a close eye on ebay and Aliexpress (and other marketplaces you'd like to trust) for these CPU's. Don't go for the first offer you'll find, compare to others. Ahead of time, select the CPU you'd want to buy as well as at least 2 alternatives which would also work for your use case.
