So I acquired a dell r730 server recently and although it does not have any drives I thought I would have some fun with a server and see what I can learn due to what my new job uses everyday. With that said I have a couple of sata ssd drives and I have been trying to get server 2019 installed but they are not seen at all.

From what I can tell on this server it has a sas raid controller which I read that sata can be swapped into those slots and be read. The raid controller is reading the drives being there in the bios but windows installation will not see them at all.

any ideas?

Stock Windows setup might not have drivers for the RAID controller, or you have to define virtual drives before Windows will see anything.

Poke around in the PERC card's interface, there should be a setting to put the card in "HBA mode". (It might also be called "IT mode", same thing.) That basically disables the RAID functionality and just hands the drives off to the OS.

I sold my soul for ProSupport.
