Anti-ghosting allows you to press any number of keys on the keyboard with out it beeping or interrupting you in anyway, If you tried it on a keyboard without this feature and press 5 (I believe it is 5) keys it will begin to beep at you, 

 

That is what Anti-Ghosting is in a nutshell,

When something ghosts in computers, it means that there is some kind of latency that is going on between components in a certain piece of hardware. For keyboards, as the other people who responded to this thread have articulated, is where you can press a high number of keys and all of them will register. The type of keyboards that have the best anti-ghosting technology are mechanical keyboards. I personally have the Razer BlackWidow 2013 Gaming Keyboard with  Chery MX Blue Switches.

The most common terms you hear are anti-ghosting and the amount of key rollover.

To sum it very easy is just.... the however amount of keys you press/hold/release are registered by the OS in correct order/released/pressed/held

When buying a keyboard make sure its "100% Anit-Ghost" and has a high rollover than 6 (which is standard on USB).

 

Tip: if the product pages doesn't say the amount of key rollover or NKRO, it usually means they are just using the same standard 6 that can be found on all/any USB keyboard.
