I tried installing again using the LTS version.
I also tried following this guide:
And I have found success.
I disabled secure boot in my laptop BIOS, and used UEFI this time instead of legacy.
I think the problem before was that I was trying to use legacy boot, but the partition wasn't set up to support that.
