Nintendo switch saved data transfer

Hey everyone, im just in need of some help that would be much appreciated.

 

My mum is currently undergoing treatment for leukaemia and is going to be in hospital for the next up to 2 months. She wants a switch and to get animal crossing. they are limited in stock here and they are expensive when we find them. My friend is willing to borrow his to her. He already has the game purchased on his Nintendo account. My question is, if we create like a user profile on the switch, can we still play the game from his Nintendo account? Also if she buys her own switch in the future, could we transfer the game data over to her new console? Obviously she would then have to buy the game for herself too. Thanks everyone
