Budget (including currency): ~$1,500 USD

Country: US

Games, programs or workloads that it will be used for: FPS (CSGO/CoD), RTS (Anno), some light photo editing.

Other details: I am in the process of putting together a SFF gaming system and wanted to get some input on future proofing. It has been 10+ years since I built my last PC, which has since been given away, and I've decided to make a return to PC gaming. I do not consider myself a hardcore gamer, so not looking for bleeding edge performance. Most components below were selected by targeting a good price/performance ratio (I realize my case/PSU are on the premium end but I am locked on those for other reasons). I am not a streamer or overclocker but would consider doing some light overclocking in the future just for fun/maybe squeeze a little more life out of my system. Here is my current build plan:

CPU: AMD Ryzen 5 3600 3.6 GHz 6-Core Processor  ($174.99 @ B&H)
CPU Cooler: Noctua NH-U9S 46.44 CFM CPU Cooler  ($59.95 @ Amazon) (selected for better thermals in SSF case/low noise/option to OC in future)
Motherboard: MSI B450I GAMING PLUS AC Mini ITX AM4 Motherboard (129.99 @ Amazon)
Memory: Corsair Vengeance LPX 16 GB (2 x 8 GB) DDR4-3200 Memory  ($79.99 @ Newegg)
Storage: Sabrent Rocket Q 1 TB M.2-2280 NVME Solid State Drive  ($129.97 @ Amazon)
Video Card: NVIDIA GeForce RTX 2070 SUPER 8 GB Video Card  ($499.99 @ Best Buy)
Case: NCASE M1 Mini ITX Tower Case (210 @ Ncase)
Power Supply: Corsair SF 600 W 80+ Platinum Certified Fully Modular SFX Power Supply  ($144.00 @ Corsair)
Total: $1428.88

My main questions:

1. Based on my use case, are there any CPU/mobo upgrades you'd recommend for around another $150? Specifically, if I want to swap out for an Ampere gpu in the future?

2. It doesn't seem like the best time to buy a new GPU with Ampere around the corner. One thought I had was to buy a solid older used card, something that could hold me over until the end of Q4, and then buy an Ampere card when it comes out. Would anyone suggest this approach? If so, what card would you recommend?

To add in a twist: My original plan was to play on a LG 27GL850-B. However with COVID-19, I'll be working from home until the end of September. In addition, I will likely have the opportunity to work from home in the future, regardless of what happens with COVID-19, so very recently I have been considering an ultrawide (LG 34GK950F-B) for productivity (I have a work laptop that I would be running off the monitor). It seems like the 2070S would get good results on an ultrawide but I know performance will be a step below 1440p/144Hz. I'd be curious if the advice changes when considering the 27" vs 34" monitors. I really wouldn't be considering an ultrawide if it wasn't for my current/future work from home situation.

Also, considering the release of B550 (Which supports 4th gen Ryzen) is on the horizon, you might as well wait in order to not need a motherboard upgrade for when you want to switch to 4th Gen Ryzen in the future.

Will ITX-sized boards be available at the launch of B550? Or do the smaller sized boards usually come later?
