Should be fine with just 2 360’s but more is better assuming you are still maintaining good flow and balance.

I'm cooling a GTX1080 and 9900K on a single 360x56mm thick xspx rx360 rad.  How many rads you need will depend on your noise/temperature level requirements.  My 9900K overclocked 24/7 while folding averages high 70's to around 80C (gpu 45c loaded).  I'm running 3 of the noctua nf-a12x25 fans capped at 1300rpm so it's still fairly quite.
