If you want to check out other people's creations here's some other projects that have their base architecture written in Assembly.

 

MikeOS is pretty simple so I'd start with that first.

There is also a Linux kernel floating around somewhere but I can't get my hands on one that is un-compiled or isn't a torrent of some kind.
