    You, sir, are my hero.

I did exactly as you said, downloaded cinebench and the temp curve stopped just shy of 70C. Thank you so much for taking the time to advise me, I will tweak these settings a little to find a happy medium until I can get a more satisfactory CPU cooler.

Liquid coolers are unnecessary for a CPU that can't even be overclocked, you won't need anything more than a Hyper 212 for that CPU.
It will most likely thermal throttle in its current condition but there's nothing to be worried about, the CPU is smart enough to handle itself and downclock to prevent damage, even as far as a forced shutdown will sometimes be necessary (rarely), it's okay for testing but not recommended for daily usage and you are probably already thermal throttling in some scenarios either way.

No, the sensor is not faulty and that CPU cooler is definitely too weak to handle the i7-8700, if you want to keep the temps under control then set a Power Limit in BIOS to prevent it from boosting to high clocks, the 65W TDP is measured at base clock which is 3.2Ghz, but the chip will boost to 4.6Ghz Single-core and 4.3Ghz All-core, similar to the 8700K.

it may be bigger, but it's still on the underwhelming side for a 6 core CPU.
