Stratocast isn't really targeted at individuals and is rather expensive last time I saw the pricing sheet (10-15$ per month per camera for the base package) and they only support Axis ($$$$$$$$) and some Vivotek cameras. The product is solid tho, had it for 2 months in order to test it and it everything worked great.
Even if it encrypted WPA/2 has it flaws even new WPA3 has potential flaw as well. I would only consider wireless setup for rent home as it basically unreliable compare to hardwired POE cameras. As you just have UPS your POE switch/network and NVR.
What is your budget?
Why do you want it discrete? It usually a good idea to make them seen as deterrent if it for home security ... If it hidden, they will think it unprotected and higher chance of break and enter. You might get their face and might catch them but usually better to prevent them from breaking and entering first.
If you have budget or already have VLAN support network it good idea to keep them on separated VLAN with no internet connection.
If you want a free and decent featured NVR software on some decent hardware/low end you can have a look at Shinobi as they now support FTP snapshot from actual IP camera to triggered recording to off-load motion detection to camera. I personally have it running with YOLO with object/person detection and has work pretty well but you do need invest in a GPU with cuda.
