I have a gtx 1060 with 1 hdmi port and was wondering if I would be able to use two monitors that only have HDMI(well and VGA but no way am I using that), I would probably get a display port to hdmi adapter, would that work for my use and would there be any downsides?

A 1060 is poor choice, I would go for a 1080 with the current environment, as a 1060 will only cost around 100 less
