Overclocking is not worth it most of the time and you shouldn't do it if you are not experienced or skilled. The box cooler is only suitable for slight overclocking and any other OC you will need a beefy fan cooler or a liquid cooler. RAM wise just get 3200Mhz for extra 3-7 USD. The 3600x also not worth it and a 3600 should do fine enough. Again, for GPU, 5600XT does not make sense right now and just get a 5700 or 5700XT on discount and preferably a Red devil version or sapphire. Your PSU is fine. But overclocking is not worth it as you are just stressing your AIO. If you want to do Ryzen OC, just get a Ryzen 3700x or Ryzen 9 as those perform better when OC'ing
