I would drop the MOBO down to a B450 board. Cheaper and will work fine for what you are doing. B450 come with the ryzen 3000 updates and only difference is it doesn't have PCI Gen 4 support. I would start of with 2x 16gb rather than 64 off the bat. Ry zen dose better with dual socket memory. For a server you don't need a Gen 4 storage solution they are very over priced. I would recommend a high capacity SSD boot drive with a high performance HDD for backing up. From running server your performance bottleneck will mostly be GPU/CPU wise rather than storage. At least that what I would do. if you want fast storage stick with 570 and the pci 4 storage. With your current configuration you could probably run 3 or 4 Ark servers, to kinda put it in perspective.

Like Faith19 said most B450 boards have the bios update to run ryzen 3000, since they are newer boards then the X570. I would say if you are not going to use PCI Gen 4 to get a b450 board. You could get a same performance from a cheaper b450 board and cheaper power supply and use the money save to get a better GPU. -

Nice build. Don't really understand why you don't want to use the ATX Power supply since the case supports it. Rather then retro fit an SFX PSU.

You would have to find things that are usb powered. They do make "mac" like keyboard for cheap that you could probably work. And I know you can get usb power monitors, or use a display panel and controller board. As for the power you would need most likely to figure out some home-brewed system. I would go with 18650 battery just be careful with them. DO NOT DO USE THEM IF YOU HAVE NO CLUE WHAT YOUR DOING! The would not be a easy task an you would need to know what you are doing. Not just design wise but electrical engineering. And tbh thats out of my league.

I feel like the mem is a good choice plus leaves room for another 2x16GB. It really doesn't matter. I would recommend not plugging the computer into any internet before you install the drives. Like put them on a usb and load them from that instead. I've had issues with windows grabbing the wrong drivers and screwing my built. I would also kinds start with what makes sense. From most important to least. Chipset > CPU > SATA > LAN > AUDIO > GPU. Again it really don't matter just my superstition.

Yes Yes No you will not have to do any bio update Yes. You could technically use both at the same time. Don't know why you would lan if best If you wanted more GPU performance you could go with a b450, PSU, and go for a 2080 super. -

I don't know if this would help you but I use Multiplicity KVM as a cheap and dirty solution. I love it and lot cheaper than buying a real KVM switch.
