I'm considering buying a used 1080ti, and want to stay away from cards used to mining.

Go with a computer shop

There is no way to prove anything. Most you can do it have them test it in front of you. As any dedicated seller will. 

 

Also doesn’t matter if it was used for mining. Seems as though the average pc user will kill a component before an average miner will.
