I thought 1.27 was too much, I thought 1.25 was at most acceptable

up to 1.5v is fine,

im comfortable to 1.4v and 85c during artificial loads.

I could prob up my oc to 5.2 with my current voltage, but im fine with the current perf.

Those temps are a little on the high side for an 8600K at 5GHz. That's around what my 8700K hits at 5GHz 1.275v.

Perhaps try re-applying thermal paste? and/or increase the pump speed?

the 81 was a one time thing, been running it for almost 2hrs now, roaming around 68-71

Ah, that's perfectly fine then. Nothing to worry about at all.
