I want to build this as my editing/gaming rig

Hey guys, I wanted to build this PC mainly for editing and gaming/streaming. I don´t play a lot of games and if I play I play at 1080p. Here´s where I need help:

 

Will a GTX 1060 6g enable me to render (with pp) and stream at the same time (through GPU acceleration) or will it cut the render time short by a significant amount/not use all of my CPU. Can you also assign cores/threads to certain tasks so your PC doesn´t use all of your CPU. My other option for a graphics card would be a GTX 1050 2G. I´m pretty set on CPU, RAM and SSD.
