A decent midrange B250 board would be a good option. Asrock and Gigabyte make pretty good budget boards.

Probably the Asrock B250M Pro4

I’m personally running an Asrock H110 mobo with my 7100 and no problems.

If you haven't bough already don't buy the 7100 buy either the G4560 for cheaper or the i3 8100 because you'd be getting 4 cores as opposed to 2 with HT. Motherboard might be a bit pricier with the 8100 but you're getting more cores and access to the 8 gen chips with more cores rather than the stale 7th gen kaby chips.
