Pfsense.

All the customization in the world, but it can be used as a simple, "Set-and-forget-it" firewall that is one of the best I've ever used.

Tek Syndicate did a setup and walkthrough video a few years back that I would also recommend, though it is a little outdated now.

Fine you want the PSU tier list? Have the PSU tier list: https://linustechtips.com/main/topic/1116640-psu-tier-list-40-rev-103/

Yeah, we use multiple Pfsense firewalls in work and I know them fairly well and most of the basic/deeper configuration, but was wondering if ye had any other suggestions

OPNSense and ClearOS are the only other two I can think of, but I really don't have any experience with them so I can't recommend them. :/

In what way is your current equipment “not cutting it”?

Only has a maximum amount of 10 port forwarding rules, and I want to set up an openVPN server also

I've heard great things for OPNSense if you want something more akin to a firewall appliance in terms of easy to set up and keeps it simple. If you want more than just a firewall/router then PFSense

Looking to buy GTX690, other multi-GPU cards, or single-slot graphics cards:

An alternative to look into would be some Sophos solutions. These are license limited versions of their corporate solutions; but free for use. E.g. maximum of 50 IP's. So may do the trick.

Sophos UTM Home Edition - https://www.sophos.com/en-us/products/free-tools/sophos-utm-home-edition.aspx

Sophos XG Firewall Home Edition - https://www.sophos.com/en-us/products/free-tools/sophos-xg-firewall-home-edition.aspx

The UTM also has a VPN client in it.

If you go ahead with it im interested to hear what you think.

This looks quite interesting! I'll defo look into it.

I do have more than one spare PC and NIC so even if I do opt with PFS, I might configure a Sophos firewall and test it out!
