Why Corsair in particular?

The monitor should come with a display port cable. http://us.aoc.com/product_feature.php?id=15

are you sure its not just stating what you can use to connect to it rather then what comes in the box? because it would suck if it didn't come with one and I had to order one and wait for it to arrive.

Corsair because I trust that brand the most.

You could scroll down on the page I linked for a list of what's included in the box.

Corsair doesn't manufacture their own psus but instead rebrands from other manufactures. Seasonic for example is one of them and is also the manufacturer behind XFX's psus.

Corsair's psus range from mediocre at best to excellent and top tier--a similar range of quality can be said about Corsair's other products. Don't put trust into the brand name alone.

One of the best budget options right now is the CX550/CX550M. Go up you can find SeaSonic FOCUS Gold/FOCUS Plus Gold 550/650, then FOCUS Plus Platinum 550/650. These are the units I recommend for their price range, since Corsair units are generally overpriced in the mid-range area.

@tinitnt010 is shopping from PCCaseGear and not the US. The cheapest Focus Plus unit on the site is $200. https://www.pccasegear.com/products/40536/seasonic-focus-plus-gold-850w-power-supply

When looking at PCPP, it's $150. https://au.pcpartpicker.com/product/WrNypg/seasonic-focus-plus-gold-650w-80-gold-certified-fully-modular-atx-power-supply-ssr-650fx

What's overpriced varies between different regions.

Didn't see that. In that case, EVGA and FSP units are generally cheapest.

There's ample room to oc with the NH-U12S. The 8600k should run very cool under stock clocks.

I am using the older version of Noctua cooler by l12 on my 8600k and works supprisingly well , but do watch your memory ie if your using over 2666 MHz io and sa voltages are increased therefore increasing heat ! So if you overclock just bear this in mind it will be ok with small overclock with 3200 memory , but be totally ok with sdp speeds ie 2133 or up to 2666.then cpu can be overclocked a far bit with this cooler . I’m not finding overcocking nessary but having faster memory does make more of a difference to me when testing
