8700k v 8600k v 7700k

8700K will last the longest and give you the most performance for the longest period of time.

8600K will probably be the sweet spot for what you're looking for and you can upgrade down the line.

7700K offers lower performance and no upgrade path.

I would stay away from the 7th gen processors unless you find a really good deal, considering that the market seems to be heading towards more cores for performance improvements, you'll see your CPU holding up for longer in terms of future-proofing.
