Which Samsung 500GB M.2 NVMe should I buy?

960 Pro if you want very fast NVME speeds. Or if you're alright with the regular 500MB/s, the 850 Evo M.2 SSDs are pretty good.

Wait for the next gen of M.2 SSDs before buying one. This gen still has thermal issues that should be ironed out in the next revision.

approximately how long will it be when the next gen comes out? and if i build my pc above before, can i boot my os onto my sata ssd and change it later?

if u only use it to boot then nvme is a waste of money
