i3 8100 works good with gtx 1060 ?

Yes the i3 8100 is basically an i5 7400 which is enough pairing for the GTX 1060

For 1080p it is enough, not the most desirable card ever but should be fine:

i mean "enough" depends on who you ask,it'll reach that limit in some games but it should be fine for now.
i'd go with the 6gb version anyways since it also performs better due to more cores

Yes, the i3-8100 is good paired with a 1060, which is considerably a good budget 1080p gaming card.

For 1080p gaming, it will be fine. And the difference between the 3GB/6GB in gaming performance, is very minimal, basically, with the 3GB version, 10% of the cores are disabled from the 6GB variant.

it is a great combo, but you are faced with two Memory amount options, 3GB and 6GB

"Make it future proof for some years at least, don't buy "only slightly better" stuff that gets outdated 1 year, that's throwing money away" @pipoawas

it is gonna be on par with the RX 480 4Gb on AMD, great choice.

and as @TheBeastPC said there won't be too much performance boost

Actually the RX 480/580 competes with the 6gb GTX 1060, not so pleasant but the 3gb GTX 1060 is better comparable to the RX 470/ 570:
