One SSD is easier to use.

 

You CAN use two 120GB drives and pair the via RAID 0, this is used to squeeze out some extra performance.

What will you use the drive for?

well technically you would get higher bandwidth if you had to drives and you were loading stuff onto both at the same time. But If you asking if you'd get higher bandwith when instaling games or other software then the awnser is simply no. Tbh I don't think there is any workaround.   Also I might be wrong Since I havn't been digging into this topic for a long time.

I would go for a single SSD, and not go for raid. With an HDD, you can hear them fail. With an SSD, you can't. Just because of that, I would not go for raid, since you have double the risk. If one of them fails, all your data is lost due to raid.
