If you care about your rendering quality and having accurate results then you need ecc ram, so you have no choice but to go with xeon or amd system. if you're just in the process of learning, fooling around or not using it for commercial work, while using system as your daily driver then 5820k is good choice, otherwise just built two system one for rendering and gaming\intrawebz

You are overclocking the whole CPU. but when you are not using all of the cores you allow the cores that are being used to run at a higher frequency...

I wouldn't change anything. If the 6800K costs just $20 more then it might be worth it. If it costs considerably more ,the 5820K is a great choice.

Definitely not worth it! The 5820K is just as fast, if not faster when both are overclocked!

I was under the impression it doesn't work that way with games. I think I saw a video somewhere comparing single and dual CPU systems, where the second CPU wasn't be used at all, as if it just wasn't there. That's just going from memory though. 

 

Important part is, from what I can find, the difference between a single E5-2670 and two seems to be a decrease in performance, or no change (for gaming)

 Matters on how many cores you are using I am fairly sure. If you have two 20 core chips the second one will not get touched at all. If you had, for some reason, a dual i3 system it would be on par with an i7 effectively.
