Quality of Service is a setting that lets you prioritize bandwidth to certain applications or programs such as Netflix or Hulu to help increase the quality of them in the event your network connection bandwidth is saturated. It will help keep those packets flowing while throttling others. As far as sharing bandwidth, since you are not running any type of 802.1x server to restrict bandwidth on devices, all your devices have full access to all available bandwidth.
