How to revert many OneUI 7 changes?

I have a toxic smartphone trait of never updating anything, mainly because updates pretty much always make everything worse to use and make them slower. Today was another reminder for why I never update anything.

 

Overnight my S23+ updated to OneUI 7 and I hate how things are worse now and I can't seem to change them back again.

• New update for pulldown notifications. Now from left and right side if pulling from the top, it'll split the pulldown for notifications or quick settings. This is horrible, because if I pull down anywhere else not from the top on a bigger phone, just get the notifications panel. How do I configure it to old version back again, where one pull down is for notifications, the 2nd for quick settings, regardless where I pull down on the screen?
• Notifications are too fat. I feel like some elder looking at my phone with 900% magnification. Where was the setting to make them thinner again?
• App switching has this new 3D shuffling effect similar to one on Win 7 with WIndows key and tab. This new animation is very slow to switch around things with and harder to see what I last used. What was the setting to swtich them back to 2D mode?
• App drawer now is set to be a scrollable single box. This is worse than the previous horizonatlly swippable pages. I've found a way to get them to go back to the pages but I can't set them to be alpabetical anymore so might as well stick to the vertically scrollable page. Anyone know how to fix this?

Surely I'll probs run into something else annoying, would be great if someone knows fixed to there.

 

If Samsung is gonna be like this for the next 4 years with the S23+ then I'm in for quite a lot of pain. Should have just stuck with the Chinese phones or Sony. Sure no updates after phone is released but at least I'd know the phone actively doesn't get worse.
