Need advice on CPU/GPU

I am personally biased toward Intel for the CPU, but if you are mainly focused on gaming, I would recommend an AMD processor. As for the GPU, I am definitely team Nvidia for multiple reasons, and because of that, I recommend the 5070, probably overclocked. I am actually looking at getting one for my upcoming build. Games, programs or workloads that it will be used for: Forza Horizon 5, Jedi Fallen Order/Survivor, Minecraft, Fortnite, Valo, CS2, and Marvel Rivals

Other details I want to play at 1080p 180hz, and get max settings with RT. should I go with a $140 12600K or $140 5700x as my CPU, and a $649 5070 or $627 7800xt as my GPU. Have a $150 CPU budget, $100 motherboard budget, and 650 GPU budget.
