How much is a ryzen chip with a iGPU? Might be a better option that the dgpu here. 

 

IDK drive prices there, but I'd see if bigger drives are cheaper per TB. Would also mean you can skip the SATA card.

I don't see any obvious issues, save for the UPS that might be underpowered. Also, check you really need those SATA cables, the HDD's may have those if you purchase the retail box. If you want to save more, consider buying a 5600G and drop the GPU. And it might pay off to use a B550 board if you can find one for a decent price.
