Just wanna know which PSU I should go with.. 1000 WATT is more than enough? or better go with 1200 WAT?? as I am worried of them spikes.. Some say 1200 WATT is an overkill

5070 Ti has 20ms spikes of 360w, 9900X3D maxes out at less than 160w.

A 750w would be more than enough.
