Are PSU cables interchangeable from the same model?

My brother has a CORSAIR RMx Shift Series RM1200x Shift for his computer and I have a CORSAIR RMx Shift Series RM850x Shift. I don't like using a daisy chain cable for my graphic card, and was wondering if I can use one of his extra PCIE cables on my power supply? Are all of the cords interchangeable because they're the same model?

Yes. Corsair cable between the RM1200x Shift and RM850x Shift are compatible between each other.

Corsair has their own compatability chart for cables.

I only use the RMx series from Corsair myself, I stand by their reliability

Corsair compatability chart is great.

That being said, you did the correct thing asking this question. You should NEVER use cables from another PSU, even if its from the same brand unless its specified like in the Corsair compatability chart.
