What refresh rate is your 1440P monitor?

Reason I ask is that you may struggle for consistent high FPS as that is mostly down to the CPU and even my 7800X3D won't max out my 360Hz screen.

Here are some ideas - I've stuck to all UK parts and thrown in a few ideas - admittedly based on personal preference, but I think you'll find a good build with either of these....

Compared to the other build above:

CPU: 7500F/7600/7600X are all very similar - I've just gone for a UK-sourced one that includes a slightly faster CPU and a box cooler.

Motherboard: the HDV is the budget motherboard king (very good quality VRMs), but the Eagle AX is also a solid budget choice with similar VRM quality - pick whichever of those is cheaper.

Memory: 6000CL30  is still the go-to speed option. My preference for Teamgroup/GSKill - Corsair shd be fine too and at £20 discount it is becoming a viable choice.

Storage: The WD 850X is reliable, brutally fast and great value: I've gone for a 2Tb WD drive as you seem to want to switch between quite a few games.

GPU: No contest here - with ~500 quid left for GPU, this is the no-brainer right now. RTX5070 might be a contender, if you want to wait... but only 12Gb VRAM and will probably be comparable speed - ignore the frame-gen scores for that though - for FPS you'll want raw rendering to minimise latency.

Case: Montech 903's are the airflow + value kings.... the BASE is great, but £6 more for the "max" with fans included seemed sensible given the heat that GPU could produce.

PSU: My choice is debatable £40 extra for only 100W uplift, but 850W should be plenty for a few upgrades and a good PSU will last you 10 years.

Main rig: Ryzen 7 7800X3D, RTX3080Ti FE, 32Gb Teamgroup Create-T DDR5-6000C30, AC Freezer3 280mm AIO, Asrock Steel Legend X670E, M.2 2Tb Samsung 990 Pro, M.2 1Tb WDSN550, SATA 8Tb WD80EFAX, Corsair HX850, LianLi O11 Air Mini + 3x NF-A14's, MSI MPG 271QRX (27"/1440P/360Hz), Gigabyte M27Q (27"/1440P/170Hz), Asus PA248 (24"/1200P/60Hz), G815 kbd, G Pro X Superlight 2, Audezee Maxwell.

Games room "TV rig": 5800X3D, AC Freezer2 280mm AIO, ASUS Prime B450M, RTX4080S w/iChill AIO, 32Gb TridentZ DDR4-3600C14, M.2 500Gb & 1Tb WDSN550, 8Tb WD80EFAX, BeQuiet Straight 1000W,  LianLi O11 Air Mini, LG G4 (55"/4K/120Hz), G815 kbd, G502 mouse, LG G1 Soundbar / Audezee Maxwell.

Lounge HTPC: Minisforum UM760 Slim, Ryzen 5 7640HS, 16Gb DDR5, 1Tb M.2, LG C2 (42"/4K/120Hz), generic wireless remote/mouse.

NAS: Synology 1812+, 3Gb RAM, 3x16Tb Seagate EXOS RAID5, 1Tb MX500 cache, 3x3Tb WDRED RAID6, 120Gb SSD cache.
