Hi. I recently bought an upgrade to my m.2 512gb ssd which currently has my windows files along with other data such as steam games. All my other m.2 slots are full on my motherboard and i wish to replace the main C drive. How would go about replacing the Windows drive while keeping the data on the rest of my drives intact? P.S. I dont really mind if lose the Steam games

When you remove any normal drive (be it SSD or HDD), it retains all info on it, so you can easily remove one M.2 SSD, install new one and use something like Acronis to clone your current system drive. Then move SSDs accordingly.

Purify your Windows 10/11, don't give Microsoft anything that you don't want to share.

This.  Either temporarily remove one of your data only m.2 drives to free up a spot to clone your Windows drive (you can swap them back later).  Or you can buy a USB enclosure for your m.2 and use that to clone your drive.  If you go with the enclosure, it'll allow you to still use your old 512gb drive as a very fast USB drive.
