Personally I'm against games being remade. So much to go wrong and to be screwed up, games are very much based around its time.

That being said would love a Remake of Age of Mythology, a HD version, with extra campaigns and stories added.

Grim Fandango, best game ever created.

The problem is that it was made in like 1990's and the hardest part about it is trying to get it to run on modern computers.

Morrowind. hopefully with skyrim, Elsweyr, Hammerfell, Cyrodiil, Black march, Valenwood, High rock and summerset added in :D
No elder scrolls fan would be seen outside for YEARS..
The complexity of Morrowind + better than skyrim graphics and mod support would be my version of rpg heaven.
and being able to explore all of tamriel if i so desired would be even better :P
you would probably need an entire room to store the game guide books...
(i am aware that elder scrolls online is being made right now.. im talking pure singleplayer here :( )

 

and then there is Enclave. some fine tuning and graphical updates and it would be awesome :D

I'm gonna say Metal Gear Solid. Yes, I know they did a remake called Twin Snakes, but stuff that came out on the Game Cube doesn't count!

Then I'm gonna say Interstate '76!

Being a Halo fanboy I will say both Halo: Combat Evolved and Halo 2, I really wish that the HD mods were finished.

CE has a HD remake ;-) it came out about 1.5-2 years ago I think
