Tired Dad wants to game on a RGB PC within NZD2500 budget

Games, programs or workloads that it will be used for: I've been out of gaming for a long time due to being a dad and immigrant (we're originally from Brazil), but the last games that I played were Baldur's Gate 3, Cyberpunk 2077, and tried some MMOs.

I hope you mean 1440p monitor.
I would suggest swapping to something more like a 7600 or X variant, and putting more money into a gpu, like the 4070's and 7800xt's.
Cooler wise, the thermalright air cooler you have selected should be good.
See if you can fit in CL30 ram, it's okay if you can't its honestly not that big of a deal.
SSD is good, maybe up that to 2tb if you can fit it in budget, as long as you dont install more than... 3 AAA games? That 1tb should be good.
I dunno about cable extensions for the PSU, not really my thing of expertise. However, I definetly wouldn't buy the RGB splitters, because your motherboard has 3 already. And if you don't plan on getting an RGB AIO cooler or more RGB case fans, then don't buy them, no real point.

There shouldn't be a need for additional thermal compound. If you get a white PSU, it comes with white cables so there would be no need for white extensions. Use the motherboard A-RGB headers to control fan lighting.
