Looking for CPU/GPU pairing advice for new mid-high end build

Budget (including currency): Flexible; Approx. $1000-$2000 (USD)

Games, programs or workloads that it will be used for: Mainly RPGs such as Genshin Impact, HSR, WW; League of Legends; the occasional AAA game (eg. FF7 remake); A bit of streaming, occasional video editing, some programming, sound mixing.

Will be using a triple monitor setup, with the Alienware 2725DF as the main monitor (games on here), a 24'' 1440p 144Hz LG Ultragear (secondary same/watching videos here) as the secondary display, and a 24'' 1080p 60Hz LG Ultragear as the tertiary (mainly static content, such as game maps, overlays, text documents). I often multitask with multiple games at once (I run mobile games on my PC so they often don't need too much active input).

I'm currently running an ROG Zephyrus G15 with a Ryzen 5900HS and 3070 mobile from 2021, running the 2 LG monitors above as primary and secondary monitors and the laptop display as my tertiary. Reason for upgrading is I don't really need a laptop (only bought a gaming laptop back then because it was at the height of the GPU shortage and a decent GPU cost as much as the laptop) and the 15 inch display that needs to be tethered to a surface isn't convenient, and I'm using standalone peripherals anyway so it's taking up a giant amount of desk space with its laptop stand. Also, cable management isn't a thing with my current setup. Also, I really want that Alienware display and I'm pretty sure my laptop will try to kill itself if I tried running THAT on it.

 

Looking for advice on CPU/GPU pairing (preferably AMD for CPU because Intel's... well Intel at the moment). Not sure if I should go with the 4070, 4070 Super, or 4070 Ti Super (leaning toward NVIDIA because of NVENC but you could sell me on an AMD card if you don't think it's necessary). Alternatively, if you guys think my laptop won't die trying to run the Alienware monitor, let me know.

Your budget is broad, but what you want should fit in the upper end.  Since you're gaming at 1440p...

 

Not sure what the living fuck is going on with the 7800X3D stock, so wait til it's back in stock to save over $100...  I should be around $400 or less, not $543 bullshit.

 

Since you're prioritizing gaming, I assume the productivity stuff is for funzies and not too serious.  The 8c/16t chip should be plenty for it, and obviously super amazing for gaming.
