I think a 7800XT would be quite a decent upgrade for this system without worrying about a severe CPU bottleneck 🙂

Impossible to eliminate bottleneck. 
Just get the best GPU you can afford right now.

1440p? A 7800XT, 6800, 6800XT or RTX 4070 Super.

A 7700 wouldn't do better than a 5700X3D you can put in your existing system without the need to change the whole platform.

The 7600X3D would also do, doesn't have to be the 7800X3D.
