Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

I would like to buy a new processor but I don't know which one will be better: Ryzen 9 5900x or I7-12700kf, if there is a better one up to PLN 1,100, someone write me  and is the Endorfa Fortis 5 cooling enough?

If you mainly plan on gaming I would recommend the 5700X3D or 5800X3D.
