I dont want to make the wrong suggestions to my partners - any chance you could show me some links of what exactly you would suggest, even go above budget, I just assumed $5k for a machine for this but we have spoke about it costing possibly more than the entire room kit we created haha (since they want to be inside that ecosystem of Apple)

Not a whole hell of a lot of configuration to do on either of them. RAM is soldered in both, so I'd recommend allocating more budget there than to storage.

Budget (including currency): High, for podcast room with multiple cameras, audio captures - $8k invested in equipment, need the brains to drive it all now - assuming Ill need to spend around $5k as it will be working with iMovies.

Country: USA

Games, programs or workloads that it will be used for: OBS recording, iMovies for editing

Other details:

I personally use Premiere Pro and adobe suits.  Need this to focus around apple products because of the use of iMovies (business partner taking care of all this) - I am 100% ok with a purpose built machine I can buy direct (must be PC not laptop at this time) to get started as soon as possible.

iMovie doesn't run on Windows or Linux, and how much longer Apple plans to support MacOS on x86-64 is currently unknown, so if you absolutely need to run iMovie for the foreseeable future then you're shopping for an Apple Silicon Mac.

The Mac mini and Mac Studio are still running on M2 chips. There's a chance one or both will be refreshed this fall, if you can wait. If not, get the M2 Ultra Mac Studio with as much RAM as your budget allows.

The Mac Pro has an M2 Ultra, but it's out of your price range.

Pitched both as solution, upgraded RAM, cloud storage or we can build a server onsite if they want - appreciate your time and help!

Alrighty perhaps last question!

Getting ready to hit the buy button - on this with 128gb RAM, 1tb SSD:

Need to know information:

Apple, to me is super proprietary - I am 100% okay with ordering their monitor and peripherals so this is a plug and play scenario - what do you recommend?

TYVM!

They're not so proprietary that you can't use third party monitors and peripherals. If your client is fine spending the money on Apple monitors, fine, but also shop around for Dell/Alienware, LG, and Samsung professional monitors.

Whichever monitors you pick, make sure they're color calibrated (marketed toward design work). Cheap monitors generally aren't.

Thank you - thought so but really wasnt sure.  Got time to recommend a monitor that would be appropriate for this budget?
