Definitely you would see a larg improvement.

 

Since you called out there could be dependency where as to get a 6700xt or 7800xt, keep in mind that there is a big performance gap between does 2 gpus and it is a night and day diffrence.

 

In some games you can see something between 40-50% diffrence.
