Want to build new PC starting with CPU and upgrading my GPU later

I bought the parts for my pc in 2017 and are feeling gaming and videos on the side is slowing it down. I don't feel like the GPU right now is the issue, and so want to upgrade my storage and CPU in the first part. I'm not sure what I need and what I can keep. Should I keep my PSU or should I swap it out when I'm upgrading.

Speaking of RAM G.Skill DDR5 6000MHz 32GB is currently down 33% from 2 670,- NOK to 1 799,- NOK. 

When it comes to motherboard the main brands I can get are MSI and ASUS with the option of NZXT N7 for AMD and Intel. 

It is worth noting that while I don't like it I'm limited to wifi where I live now so the motherboard needs a wifi connection, and would like it integrated. 

Asus have also gotten the cold shoulder it seems tough I haven't had a issue with them the last 2 pc I have built, though as previously mention it was in 2017. 
 

As stated in the budget I want to go for a i7 or a Ryzen 7 CPU but want to see if there are any pitfalls that I should be aware of, and how much I should spend on a motherboard to pair it with. 
I have always gone with Intel as it has been the no brainer option, and have always felt that AMD is for people who want to troubleshoot more. I don't know how valid this is today though I have read some issues with AMD and some RAM ships.

 

I want to upgrade my storage and have looked at:
Kingston KC3000 M.2 2280 NVMe SSD 2TB but have hear that Kingston have a bad rep. It is currently on sale for 1 499,- NOK down from 2 390,- NOK.

That's inherently bad for am5. Its more suited to 6000 CL30 or 5600 Cl28

Not sure what you are referring to here, the RAM set is a 6000 set and not a 5600, that said I don't know if it is still good or bad for AM5
G.Skill Flare X5 32 GB (2 x 16 GB) DDR5-6000 CL36 Memory is also a option looking at the pc part picker and is a 36-36-36-96 timing

6000 CL36 is bad for am5. Try and get a 6000 CL30 or 5600 CL28 kit
