Looking for advice on first custom gaming PC build...

Budget (including currency): $800 USD

Country: USA

Games, programs or workloads that it will be used for: ELDEN RING, Dark Souls, Doom, Cult of the Lamb, Animal Crossing, No Man's Sky, Stray, and possibly more. 

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I will already have a monitor (1440p), but I will need to buy a headset, keyboard, mouse, on top of the PC, within $800. I can spend a little bit more if needed but it will already take me a while to save $800 so I really need to keep this as close to $800 total as possible. I am OKAY with used parts as long as it's tested. I think you would know better than I which parts are better to get used and which are better to get new.

This makes it sound like you don't have the money for the system yet. Given how quickly the PC market moves, whatever recommendation we make today is likely not gonna be relevant within a week, especially if we include some used parts from places like eBay. If I'm misreading this, let me know, but giving a proper recommendation for something you're not gonna buy until a month or so out isn't really possible and you're better off coming back and asking again at that point.

This should be able to run most games at 100+ FPS at either 1080p or 1440p, hope this helps.

for used the best used part that would save you a lot of money would be the gpu, getting a used psu or mobo is really not recommnded. Pcpart picker list: all except case https://pcpartpicker.com/list/xfQPZw

HEAVY +1. If OP doesnt have the cash now, keep it close to your chest. If you do have the cash now though... Id still recommend even 1000$. All the games in your suites (Especially ER and Doom) here are a massive GPU hog and would benefit from the most you can get for your money.

You can go used on the GPU pretty safely and get yourself a 5700XT (fair price around 150-175$) or RTX 2070 Super (fair price around 200-250$, same with the 6600XT) which would give you better GPU value or performance respectively.
