Probing a Strange PSU

So I've come to possess this used Great Wall E750 PSU, which has none of the original modular cables. Normally I would ask around for compatible models/cables and move on. I've been in this position before and want to ask:

 

 1) Is anyone familiar with the pinouts of this model, specifically the EPS connector for GPU

 2) Can I simply probe each socket of a mysterious PSU with the PC on, and expect to get to get readings on the multimeter without causing any damage

 

If I'm missing something obvious please let me know. It would be nice to determine the pinout of an unfamiliar PSU without any kind of reference
