So its better to get 5800x with 16 gb? I can't afford 32 gb ram unless i buy the cheaper 5600x/5600. Is more cores or more ram better?

Depends on your usage

A 5800X has 2 additional cores (8 to 6), boosting a tad higher and maybe some more L3 cache iirc

So it's 33% faster on all cores loads (productivity, zipping files etc), but for gaming or other tasks it's only a few % faster only as long as the 6 cores aren't fully used (can happen if you're gaming+discord+streaming...)

otoh you'll gain nothing with additional RAM as long as you got enough for what you're doing, windows + games needs 16GB only atm, unless you have 100 Chrome tabs open eating up many GBs or RAM so need more

If i buy the 5600x, i have the money to buy 32 gb ram but if i get the more expensive 5800x i only can afford 16 gb ram. Which one should i go for? My pc build is for 1440p gaming and maybe streaming in the future. I have a rtx 3070.

Avoid the 5600X and 5800X if you have the 5600 and 5700X available, those are nicely cheaper but offer the same performance.

5800X>5700X>5700G, the G having an iGPU but otherwise slower

That shouldn't be.

Also, what CPU do you have now?
