Basically as the title of the thread says. I have an ssd that is larger than my boot drive as it is constantly full of data/stuff. I am wondering what steps I need to take in order to transfer all of the data off the old drive onto the new one and make the new one the boot drive. Cheers.

Basically clone your windows to a new drive, then setup the new drive as boot drive, then clean out the old drive.

Usually SSD manufacturers will provide migration tools, Samsung is a good example.
