Apple still have OpenGL support (deprecated) for many years apples OpenGL driver has in fact been implemented onto of metal. This is in fact a really nice feature as it means we have access to a load more diagnostic tooling for profiling that you would not expect for a higher level lang.

On the apple supporting VK side of things. It is worth noting that any VK support apple would provide would be quite different to the the set of Vk apis PC games expect. Since apple's GPUs to beefed up PowerVR TBDR gpus the set of VK apis that would make sense to support are those currently only used on some lower end mobile phones and even there the VK feature set exposes only a small faction of the modern TBDR features in apples GPUs so VK apis on apples hardware would include a LOT of vendor specific extensions and would not play exiting desktop VK games that currently expect VK features that make no sense to support on apples GPUs.   In the end from my experience porting a rendering pipeline from a TBIR pipeline to TBDR is were 99% of the work is when supporting apple platforms needing to use Metal instead of VK is a rounding error in the work and Metal provides much better TBDR apis so it is simpler to do that than try to do this in VK with its rather limited support in that area.

Both of these ports were developed long before there were industry standards that could compete with them. I hope you're aware apple is one of the main backers of USB-C and TB. Apple has not issue with using an industry standard but will not wait on releasing a product until the industry stop auguring over what they want.
