6750xt or 2070 super

Do you do much streaming and video editing?

If not 6750 xt any day. If you do, I’d be looking at a 3060/3060ti instead of the 2070. Especially if you want to ray trace. 

I'm not actually trying to be as grumpy as it seems.

I have got a 2070 super at the moment. Use it sometime on a 4k tv most of the time high refresh rate 1080p monitor was look at the 6750 for the v ram

At 1080p VRam won't be an issue, I'd be inclined to wait until AMD / NVidia launch their new cards and see if you can pick up one off the current models in a clearance sale.
