Uprgading to alder lake, concerns about the transition to windows 11

Games, programs or workloads that it will be used for: Steam library, emulation, office suite

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): Upgrading I7-6700k and Rx 580 to I5-12600k and RTX 3060. Aiming for 1080p gaming at 144 hz. I've been looking at videos for the upgrade and have a blank ssd ready for windows 11. I'm just wondering if I can use my old windows 10 education key for the upgrade despite using a different drive for windows 11. I plan on using my old rig for a server for my mom's business and was wondering if I should just buy a new windows key since I don't plan on running the server on linux.
