With the VCCIO and VCCSA restriction on 12th Gen non-K processors, there shouldn't be a way to damage the IMC with XMP, right?

Correct.
Well, according to Intel's fine print, if you ENABLE XMP. that already voids the warranty.
Gamers Nexus 'Tech Jesus' went "under cover" on this XMP / warranty topic a few years ago.
Basically, even Intel staffs don't really care.
And I can confirm that, what 'Tech Jesus' reported with first-hand experience.
- My Intel i7-6800K died, and I started an RMA with Intel.
- Intel rep asked me if I enabled XMP - I said yes.
- They said XMP voids warranty...but let me check with a supervisor.
- Uhhh....OK we will refund you since CPU is discontinued, and we won't have an ETA when we will have a replacement for you.
- Send us back the CPU, and copy of your invoice/receipt...
